So, I've been experimenting with goat cheese, and I'm pretty happy with what I've concocted.
I cheap and buy my pie crust (mostly because I don't normally have the time to make one when I want it). I use the refridgerated kind, and just used one of them to line a pie plate.
Filling:
- One block of cream cheese
- One log of goat cheese
- 1/2 cup of milk (this varies depending on what I have in the fridge...half & half, heavy cream,
etc...).
- 1/4-1/2 C. of grated cheese (again, this varies depending on what I put on top).
- 2 eggs
Mix all the ingredients together and season with salt, pepper, and whatever spices you'd like.
Topping:
This is where you can alter the basic filling recipe to go with other dishes, but I've done:
- crumbled bacon and home preserved figs.
- caramelized onions and garlic
- caramelized onions, sauteed mushrooms, and fresh thyme.
Pour your filling in your pie crust, put your toppings on, and then bake at 350 degrees for ~45 minutes.
